Passionfruit impossible pie

Easy and delicious passionfruit impossible pie that will make everyone think you bought it!
Ingredients:
  • 4 eggs
  • 257.50 gm milk
  • 1 tsp finely grated orange rind
  • 125g butter, melted
  • 215.00 gm caster sugar
  • 125.00 ml passionfruit pulp (see notes), plus extra to serve
  • 125.00 ml plain flour
  • 85.00 gm desiccated coconut
  • Icing sugar, to serve
  • 8 small scoops vanilla ice-cream, to serve
Instructions:
  • Preheat your oven to 170C (150C fan-forced) and grease a 24cm round pie dish.
  • Combine eggs, milk, citrus rind, melted butter, sugar, passionfruit pulp, flour, and coconut in a bowl, whisk until smooth. Pour the mixture into the prepared dish.
  • Bake until golden around the edges and a skewer inserted into the center comes out clean, about 45-50 minutes. Let cool in the dish for 10 minutes, then refrigerate for 2 hours before serving as per the notes.
  • Sprinkle with powdered sugar, cut into wedges, drizzle with more passionfruit pulp, and enjoy with a scoop of vanilla ice cream.
