Passionfruit souffles

Ingredients:
  • 4.60 gm vegetable oil, to grease
  • 20.00 gm caster sugar
  • 3 egg whites, at room temperature
  • 80g (1/3 cup) caster sugar, extra
  • 1 170g can passionfruit in syrup, undrained
  • Icing sugar, to dust
Instructions:
  • Preheat oven to 180°C and lightly grease four 250ml (1-cup) ovenproof dishes with oil, then sprinkle with sugar, shaking off any excess.
  • In a clean dry bowl, use an electric beater to whip egg whites until soft peaks form. Gradually add sugar one spoonful at a time, whisking well after each addition until sugar dissolves completely.
  • Gently fold passionfruit into fluffy egg whites using a large metal spoon. Divide mixture into dishes and smooth the tops with a flat knife. Place dishes on a baking tray and run your thumb around the inside rim of each dish. Bake in a preheated oven for 12 minutes or until golden. Dust with icing sugar and serve right away.
