Traditional Passover apple cake passed down to perfection by Faye Grant. Unbeatable flavor for your Seder feast!
Ingredients:
  • 1 cup vegetable oil
  • 2 large eggs
  • 1.5 cups matzo meal
  • 0.5 cup potato starch
  • 2 teaspoons ground cinnamon, divided
  • 8 large apples - peeled, cored and sliced
  • 0.5 cup brown sugar, or more as needed
  • 0.5 teaspoon ground nutmeg
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch glass baking dish.
  • Using an electric mixer, blend oil, sugar, and eggs in a large bowl until fully mixed. Gently fold in matzo meal, potato starch, and 1 teaspoon of cinnamon until well incorporated. Set the mixture aside for later use.
  • In a separate large bowl, mix apples with brown sugar, the remaining 1 teaspoon of cinnamon, and nutmeg.
  • Spread half of the dough in the baking dish. Top with apple mixture and cover with remaining dough. Optionally, sprinkle with brown sugar.
  • Place in the oven that has been preheated and bake for 45 minutes.
