Delicious sweet matzo kugel with apple and raisins, perfect for Passover. A versatile Jewish dish adored by all for any meal.
Ingredients:
  • 4 matzo sheets
  • 3 eggs, beaten
  • 0.5 cup sugar
  • 0.25 cup vegetable oil
  • 1 teaspoon ground cinnamon, or to taste
  • 2 apples - peeled, cored and cubed
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking dish. Break matzo sheets into pieces, soak them in water until soft, then drain in a colander, gently squeezing out the water.
  • In a separate bowl, combine eggs, salt, sugar, oil, and cinnamon. Mix in soaked matzo. Fold in apples and raisins. Spoon the mixture into the baking dish and spread evenly.
  • Roast in the oven until golden brown and the apples are soft, approximately 45 minutes.
