Passover-inspired sponge cake with matzo cake meal, eggs, potato starch, and zesty orange juice creates a delicious dessert for any occasion.
Ingredients:
  • 8 egg yolks
  • 1 tablespoon orange zest
  • 0.75 cup matzo cake meal
  • 0.25 cup potato starch
  • 8 egg whites
  • 1.5 tablespoons fresh orange juice
Instructions:
  • Heat the oven to 325 degrees F (165 degrees C) and prep a 10-inch tube pan by greasing and lining the bottom with parchment paper.
  • In a medium bowl, vigorously whisk together egg yolks until they become lighter in color. Slowly incorporate 1 cup of sugar and orange zest. Keep whisking until the mixture is thick and pale, which should take about 7 minutes.
  • Combine matzo cake meal and potato starch, ensuring they are well mixed together.
  • Beat egg whites in a large glass or metal mixing bowl until foamy, then gradually add 1/2 cup sugar until stiff peaks form. Alternate folding matzo mixture with yolk mixture into the mixture, then fold in whites in stages until no streaks remain. Spread the batter evenly into the prepared pan.
  • Bake the cake in the preheated oven for about 1 hour or until a toothpick inserted into the center comes out clean. Let it cool by inverting it onto a wire rack and gently run a knife around the sides of the cake before unmolding.
