Passover Lasagna

Delicious baked matzo lasagna with Swiss and mozzarella cheese, customizable with your choice of veggies.
Ingredients:
  • 1 (10 ounce) package matzo sheets
  • 1 quart tomato sauce
  • salt and pepper to taste
  • 1 (8 ounce) package sliced Swiss cheese
  • 2 cups shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and generously spray a 9x13-inch pan with cooking spray.
  • Break matzo sheets in half and gently moisten under warm water. Pour tomato sauce into a bowl and season generously with salt and pepper. Spread a portion of the tomato sauce on the bottom of the pan, then start layering with the softened matzo, Swiss cheese, mozzarella, and more tomato sauce. Repeat layers until cheeses are gone, ending with matzo on top. Finish by spreading the rest of the tomato sauce, and sprinkle with Parmesan and oregano.
  • Bake until the cheese is gooey and bubbly, about 25-30 minutes in the preheated oven.
