15-minute easy pasta dish recipe for busy or tired days.
Ingredients:
  • 250g dried farfalle pasta
  • 2 zucchini, ends trimmed, halved lengthways, thinly sliced diagonally
  • 1 bunch asparagus, woody ends trimmed, cut into 2cm pieces
  • 250g snow peas, trimmed, thinly sliced lengthways
  • 4 yellow squash, ends trimmed, thinly sliced
  • 1 x 300ml ctn light thickened cream
  • 23.40 gm wholegrain mustard
  • 20.00 ml finely shredded lemon rind
  • 62.50 ml finely shredded fresh basil
Instructions:
  • 1. Boil pasta in salted water until al dente following package instructions. Toss in zucchini, asparagus, snow peas, and squash. Cook for 2 minutes until snow peas are vibrant and tender-crisp. Drain and return to pan.
  • In a sizzling frying pan, mix together the cream, mustard, lemon rind, and garlic. Let it bubble up. Lower the heat and simmer while stirring for 2 minutes until the sauce thickens.
  • Combine the creamy mixture with the pasta, mixing until just incorporated. Fold in fresh basil and season generously with salt and pepper. Serve alongside a medley of mixed salad greens.
