Enhance Pasta Rustica with Lindsay® Black or Green Ripe Olives for a tantalizing blend of sweet peppers, zesty olive oil, and fiery pepper flakes. Top off with Parmesan for a truly delectable meal!
Ingredients:
  • 1 pound rotini or fusili pasta
  • 6 slices bacon
  • 0.5 cup extra virgin olive oil
  • 2 medium onions, chopped
  • 1 red bell pepper, chopped
  • 0.25 cup chopped parsley
  • 4 cloves garlic, minced
  • 0.25 teaspoon Salt
  • 0.5 teaspoon crushed red pepper flakes
  • 1 (28 ounce) can plum tomatoes, undrained, coarsely chopped
  • 0.5 cup Lindsay® Black Ripe Pitted Olives or Lindsay® Green Ripe Select Olives sliced, drained
  • 2 tablespoons capers, drained
  • 0.5 teaspoon dried oregano
Instructions:
  • Prepare the pasta as instructed on the package. Simultaneously, crisp up the bacon in a large deep skillet. Once crisp, drain the bacon on a paper towel and then break it into 1/2-inch pieces.
  • Pour out the bacon drippings from the skillet and then add oil. Saute onions in the oil over medium heat for 5 minutes, stirring occasionally. Toss in bell pepper, parsley, garlic, and pepper flakes and cook for an additional 2 minutes. Add tomatoes and the reserved bacon, simmer for 10 minutes, stirring occasionally. Finally, mix in olives and oregano and simmer for 2 more minutes. Season with salt to your liking.
  • After draining the pasta, mix it with the sauce and cheese. Serve on plates and top with extra cheese, if desired.
