Savor the flavors of Italian sausage, squash, mushrooms, and bell peppers in a rich homemade tomato sauce, mixed with pasta for a hearty meal.
Ingredients:
  • 1 (12 ounce) package rotini pasta
  • 1 pound bulk Italian sausage
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell peppers, chopped
  • 1 small zucchini, chopped
  • 1 small yellow squash, chopped
  • 1 cup mushrooms, sliced
  • salt and pepper to taste
  • 1 (14.4 ounce) can diced tomatoes
  • 1 cup tomato sauce
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon dried oregano
  • 1 cup grated Parmesan cheese
Instructions:
  • Bring a large pot of salted water to a rolling boil. Cook pasta until al dente, about 8 to 10 minutes. Drain well.
  • In a skillet over medium heat, brown sausage, breaking it apart as it cooks. Once cooked, use a slotted spoon to transfer the sausage to a plate, keeping the flavorful drippings in the pan. Cook diced onion and minced garlic in the sausage drippings until the onions are soft. Return the sausage to the pan, then add diced red bell pepper, zucchini, yellow squash, and sliced mushrooms. Season with salt and pepper and cook for 5 more minutes. Stir in diced tomatoes, tomato sauce, thyme, basil, and oregano, and cook for an additional 5 minutes until heated through.
  • In a large bowl, toss the cooked pasta with the flavorful sausage mixture. Sprinkle with a generous amount of Parmesan cheese before serving.
