Pasta salad with tahini dressing

Protein-rich tahini elevates this Middle Eastern salad for a satisfying vegetarian meal.
Ingredients:
  • 1 x 200g ctn country-style reduced-fat natural yoghurt
  • 40.00 gm water
  • 24.00 gm tahini
  • 21.00 gm fresh lemon juice
  • Freshly ground black pepper
  • 250g penne pasta
  • 2 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
  • 1 x 250g punnet cherry tomatoes, halved
  • 1 large avocado, halved, stone removed, peeled, thinly sliced crossways
  • 1/2 red onion, thinly sliced
Instructions:
  • In a small bowl, mix together the yoghurt, water, tahini, and lemon juice. Taste and season with pepper to your liking.
  • Cook the pasta in a large saucepan of salted boiling water according to package instructions until al dente. Drain and rinse under cold running water, then transfer to a large bowl.
  • Combine the cucumber, tomato, avocado, onion, and yogurt mixture, gently mix, and serve over pasta salad. Enjoy with spice-crusted lamb cutlets.
