Elevate your pasta with the aromatic blend of basil and pine nuts for a burst of flavor and crunch.
Ingredients:
  • 500g spaghetti
  • 80g (1/2 cup) pine nuts, toasted
  • 2 large ripe tomatoes, de-seeded, finely diced
  • 90g (3 cups) firmly packed fresh basil leaves, washed, dried well
  • 5 garlic cloves
  • 200mls olive oil
  • 60g (3/4 cup) grated parmesan
  • Salt & ground black pepper, to taste
Instructions:
  • Heat a large saucepan of water until rapidly boiling. Add 1 teaspoon of olive oil, then add the pasta. Stir to prevent sticking and cook until al dente following package directions.
  • After draining, place in a large bowl and coat with the 3 teaspoons of olive oil. Cover to keep warm or allow to cool to room temperature.
  • Create a flavorful basil paste by blending basil leaves, garlic, and olive oil in a food processor until smooth. Then, mix in parmesan cheese and season generously with salt and pepper.
  • Combine most of the basil paste with the pasta and pine nuts, then toss. Serve warm or at room temperature, topped with the rest of the basil paste and diced tomato.
