Pasta with green vegetables

Vibrant pasta dish loaded with greens for a healthy meal.
Ingredients:
  • 9.20 gm olive oil
  • 3 anchovies rinsed, drained, chopped
  • 40.00 ml capers, rinsed, drained
  • 2 bunches asparagus, trimmed
  • 2 zucchini, trimmed, thinly sliced
  • 300g linguine or spaghetti
  • 250.00 ml frozen peas
  • 2 lemons, rind finely grated, juiced
  • 5.90 gm Dijon mustard
  • 2.50 gm caster sugar
Instructions:
  • Prepare the zesty lemon dressing by whisking together all ingredients in a small bowl until fully blended.
  • In a large non-stick pan over medium heat, heat oil. Add anchovies and stir for 1 minute until dissolved. Add capers, asparagus, and zucchini, coat in oil, then add 1 tablespoon water, cover, and cook for 2 minutes until vegetables are tender.
  • Cook the pasta until tender according to the package instructions, and add the peas in for the last 2 minutes of cooking. Drain the pasta and peas, then return them to the pan.
  • Combine the vegetables and dressing with the pasta over low heat, tossing until well mixed. Season with salt and pepper. Enjoy alongside some bread.
