Spicy salami and fresh tomatoes elevate this pasta dish to a gourmet level.
Ingredients:
  • 60ml olive oil
  • 185g salami, cut into small chunks
  • 2 cloves garlic, crushed
  • 1/4 tsp chilli flakes
  • 125ml marsala
  • 20.00 ml chopped rosemary
  • 250.00 ml chopped fresh tomatoes
  • 400g spaghetti
  • 200g mixed green and black olives, pitted, roughly chopped
  • Grated parmesan, to serve
Instructions:
  • In a large frying pan over medium heat, warm the oil. Add the salami, garlic, and chili. Cook until the salami starts to crisp, stirring occasionally. Pour in the marsala and add the rosemary. Simmer until the liquid reduces by half. Mix in the tomatoes and cook for an additional 5 minutes until slightly thickened.
  • While the sauce simmers, boil pasta in salted water until al dente as per package instructions, then drain. Mix in olives and adjust seasoning as needed. Combine with sauce, top with grated parmesan, and serve.
