Pasta with Spinach Pesto Sauce

Spinach and tofu puree with lemon, garlic, Parmesan, and Italian seasoning combined with sauteed onions and mushrooms for a delicious pasta sauce. Top with bacon and extra Parmesan for a perfect finish.
Ingredients:
  • 16 ounces fresh spinach, washed and chopped
  • 6 ounces low-fat, firm silken tofu
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced garlic
  • 0.125 cup low-sodium chicken broth
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 10 ounces fresh mushrooms, thinly sliced
  • 6 ounces fresh sliced shiitake mushrooms
  • 0.5 cup diced red onion
  • 0.25 cup bacon bits
Instructions:
  • Prepare the pasta as instructed on the package.
  • While the pasta is cooking, blend spinach, tofu, lemon juice, garlic, broth, cheese, pepper, and Italian seasoning in a food processor or blender until smooth. Set aside.
  • Begin by generously spraying a large non-stick saute pan. Saute onions and mushrooms over medium heat until tender. Lower the heat, stir in the pesto mixture, and heat until warmed through.
  • Combine pasta, sauce, and crispy bacon bits, ensuring every strand is coated in deliciousness. Garnish with extra Parmesan cheese to your heart's desire. Adjust sauce consistency by adding pasta cooking water or broth if needed.
