Elevate your dishes with creamy macadamia nut and spinach pesto. Perfect for fish or pasta!
Ingredients:
  • 250.00 ml baby spinach
  • 125.00 ml baby rocket
  • 125.00 ml roasted salted macadamia nuts
  • 2 garlic cloves, roughly chopped
  • 113.75 gm extra-virgin olive oil
  • 60g parmesan cheese, finely grated
Instructions:
  • Combine spinach, rocket, macadamia nuts, and garlic in a food processor. Blend, pausing to scrape down the sides occasionally, until the mixture is almost smooth.
  • While the mixer is on, gradually pour in the oil until fully incorporated. Blend until the mixture is smooth and combined.
  • Place the flavorful pesto in a bowl, then sprinkle in the parmesan. Season with a hint of salt and pepper, and gently stir until fully blended.
