Sweet potato fritters with tomato salsa

Whip up tasty sweet potato fritters with Coles Hommus Dip and a zesty tomato, spinach, and rocket salsa for a quick and satisfying spring meal.
Ingredients:
  • 700g gold sweet potato, peeled, grated
  • 150g plain flour
  • 3 spring onions, trimmed, thinly sliced
  • 1 bunch dill, sprigs picked
  • 1 tsp caraway seeds
  • Sunflower oil, to shallow-fry
  • 250g cherry tomatoes, quartered
  • 40.00 ml capers, drained reserving brine
  • 200g Hommus Dip
  • 200g pkt Baby Spinach & Rocket
Instructions:
  • In a microwave-safe bowl, warm the sweet potato on high for 2 minutes until heated through. Stir in the flour, season to taste, and mix in the spring onion, ¼ cup of dill, and caraway seeds.
  • Pour enough oil into a large frying pan to come 1cm up the side. Heat over medium-high heat. Spoon four ¼-cup portions of sweet potato mixture into the pan. Cook for 2-3 mins on each side until golden brown and cooked through. Transfer to a plate lined with paper towel and cover with foil. Repeat with remaining sweet potato mixture in 2 more batches.
  • Combine the tomato, capers, 1 tablespoon of reserved caper brine, and the rest of the dill in a bowl.
  • Place a generous portion of hommus on each serving plate and layer with fresh spinach, rocket, sweet potato fritters, and tomato mixture. Finish with a sprinkle of seasoning before serving.
