Delicious sweet potato noodle fritters with a hint of spice, served with flavorful Baba ghanoush.
Ingredients:
  • 250g fresh sweet potato noodles
  • 3 eggs, lightly beaten
  • 2.50 gm ground cumin
  • 0.63 gm ground cinnamon
  • 40.00 ml finely chopped fresh coriander, plus extra sprigs to serve
  • 125.00 ml plain flour
  • 40.00 ml chilled sparkling mineral water
  • 57.50 gm vegetable oil
  • Chopped avocado, to serve
  • Lemon wedges, to serve
  • Baba ghanoush dip, to serve
Instructions:
  • Crush noodles slightly. Combine eggs, garlic, cumin, cinnamon, coriander, flour, and mineral water in a large bowl. Season with salt and pepper, then add noodles and stir gently to mix.
  • - Warm oil in a large frying pan over medium heat. - Spoon 2 tablespoons of egg mixture into the pan and repeat 5 times. - Cook each side for 2 to 3 minutes until golden and fully cooked. - Place on a tray lined with paper towel. - Repeat the process with the remaining noodle mixture.
  • Sprinkle extra coriander on top of the fritters for a fresh burst of flavor. Accompany with slices of creamy avocado, zesty lemon wedges, and a side of dip for a delightful meal.
