Ingredients:
  • 20ml oil
  • 2 cloves garlic, crushed
  • 500-600g beef mince
  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • 400g tomato
  • 2-60.00 ml Italian herbs
  • 45.20 gm barbecue sauce
  • 3-4 zucchinis
  • 300-400g mozzarella cheese
Instructions:
  • Preheat your oven to 180C.
  • Sear minced meat and garlic in oil in a non-stick pan, then set aside.
  • Sauté the capsicum until tender, then combine with the ground meat and vegetables, mixing thoroughly.
  • Add 2 cans of tomatoes, Italian herbs, and barbeque sauce to the mixture. Peel the zucchinis lengthwise with a peeler.
  • Arrange the zucchini strips in a 20cm x 20cm ovenproof dish.
  • Layer half of the mince over the zucchini slices, sprinkle with a handful of cheese. Repeat with another layer of zucchini and mince, then sprinkle the remaining cheese on top to cover the lasagna.
  • Bake in the oven for 30-35 minutes until the zucchini is tender. Serve with a side salad.
