Whip up a restaurant-worthy tuna pasta salad in 30 minutes or less. Perfect for quick lunches and tasty leftovers.
Ingredients:
  • 400g penne rigate
  • 425g can tuna in oil
  • 250.00 ml drained Greek pitted kalamata olives
  • 2 tsp finely grated lemon rind
  • 42.00 gm lemon juice
  • 80g baby rocket leaves
  • shaved parmesan cheese, to serve
Instructions:
  • Prepare pasta in a generous amount of boiling, salted water according to package instructions until al dente. Strain.
  • Lower the heat and gently introduce the flavorful tuna. Flake the tuna with a fork. Mix in the pasta, olives, lemon rind, lemon juice, and rocket. Season generously with salt and pepper, then blend everything together. Present the dish with a sprinkle of Parmesan on top.
