Make quick, wholesome tuna pasta the family will devour in under 30 minutes.
Ingredients:
  • 400g angel hair pasta
  • 1 red onion, roughly chopped
  • 2 tsp finely grated lemon rind
  • 125.00 ml whole green olives
  • 42.00 gm lemon juice
  • 3 x cans smoked tuna slices in oil, drained
  • 82.50 ml chopped flat-leaf parsley
  • salt and cracked black pepper
Instructions:
  • Boil pasta in generously salted water until al dente according to package directions. Drain and keep warm.
  • Heat oil in a large non-stick pan over medium heat. Cook onion until softened, about 4 minutes. Stir in garlic and lemon zest, cook for an additional 1-2 minutes.
  • Combine the cooked pasta with olives, lemon juice, tuna, and parsley in the pan. Season generously with salt and cracked black pepper to enhance the flavors.
  • Carefully mix all ingredients together until thoroughly incorporated and heat for an additional 2-3 minutes or until heated through. Spoon into individual serving bowls and garnish with shaved parmesan. Serve alongside a fresh, crisp salad.
