Ingredients:
  • 8 1cm-thick slices crusty Italian bread
  • 150g reduced-fat fresh ricotta
  • Salt & ground black pepper, to taste
  • 1 bunch rocket, ends trimmed, washed, dried
  • 2 125g cans smoked tuna slices in spring water (John West brand)
  • 40g semi-dried tomatoes, sliced
  • 9.20 gm olive oil
Instructions:
  • Preheat the grill to medium-high heat. Place the bread slices on a baking tray and grill for 1-2 minutes on each side until golden brown.
  • In a bowl, combine ricotta with a dash of salt and pepper. Mix vigorously with a wooden spoon until creamy.
  • Spread a generous layer of creamy ricotta over the crispy toasts. Layer on the peppery rocket, savory tuna slices, and sweet semi-dried tomatoes. Drizzle the dish with a flavorful stream of oil and sprinkle with an extra touch of pepper for a burst of flavor. Serve promptly to enjoy all the tasty elements at their best.
