Quick and refreshing pasta dish bursting with fresh flavors, perfect for any meal - ready in 20 minutes or less!
Ingredients:
  • 10 vine-ripened tomatoes
  • 66.60 gm sundried tomato paste
  • 80ml olive oil
  • 12 fresh basil leaves, torn, plus extra for garnish
  • 1/2 tsp dried chilli flakes
  • 500g orecchiette pasta (or other short pasta)
  • 150g buffalo mozzarella* (or bocconcini)
  • Grated parmesan, or vegetarian hard cheese, to serve
Instructions:
  • Grate tomatoes into a bowl, capturing all the juice. Mix in tomato paste, oil, basil, and chili. Season with salt and pepper.
  • Boil pasta in salted water until perfectly cooked. Reserve 1/4 cup (60ml) of cooking water. Combine pasta with sauce and reserved cooking water. Season to taste.
  • Break the mozzarella into bite-sized pieces, combine with the pasta, and transfer to serving bowls. Top with parmesan and fresh basil for an additional burst of flavor. Serve promptly to enjoy at its best.
