"Delicious summer pasta bursting with fresh tomato and garlic - a new favorite!"
Ingredients:
  • 2 pounds tomatoes
  • 1 (8 ounce) package angel hair pasta
  • 1 tablespoon olive oil, or as needed
  • 4 cloves crushed garlic
  • 1 tablespoon tomato paste
  • salt to taste
  • ground black pepper to taste
  • 1 tablespoon chopped fresh basil
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Start by submerging ripe tomatoes in a sizable pot filled with water. Bring the water to a gentle boil, then drain it and refill the pot with fresh cold water. Proceed to delicately peel the tomatoes and chop them into small, uniform pieces.
  • Boil generously salted water in a large pot. Cook angel hair pasta until al dente, about 4 to 5 minutes, stirring occasionally.
  • In a generously oiled large skillet, gently cook garlic until just translucent. Stir in tomato paste followed by tomatoes, salt, and pepper. Simmer on low heat until pasta is cooked, then add basil before serving.
  • After draining the pasta, skip rinsing and instead coat it lightly with olive oil before combining it with the sauce.
  • Once ready to serve, lower the heat to its lowest setting and leave uncovered to keep warm for approximately 10 minutes. Sprinkle liberally with fresh Parmesan cheese before serving.
