Vibrant and flavorful pasta dish, ready in no time.
Ingredients:
  • 2 1/2 cups uncooked penne pasta (8 ounces)
  • 2 teaspoons olive or vegetable oil
  • 2 garlic cloves, finely chopped
  • 1 pound roma (plum) tomato, coarsely chopped (6 medium)
  • 1 tablespoon chopped fresh basil leaves
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
Instructions:
  • Prepare pasta according to package instructions. Drain and set aside.
  • As the pasta cooks, heat oil in a 10-inch skillet over medium-high heat. Sauté garlic for 30 seconds, stirring occasionally. Add tomatoes and cook for 5-8 minutes until soft and sauce thickens slightly. Stir in basil, salt, and pepper, cooking for an additional minute. Serve the sauce over the cooked pasta.
