Whip up a delicious pasta dish in just 30 minutes with a savory tomato and basil sauce.
Ingredients:
  • 1 1/4 cups uncooked penne pasta (4 oz)
  • 2 teaspoons olive or vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 lb plum (Roma) tomatoes (6 medium), coarsely chopped
  • 1 tablespoon chopped fresh basil leaves
  • 1/8 teaspoon freshly ground pepper
Instructions:
  • Prepare the pasta according to package instructions, excluding salt. Drain once cooked.
  • In a 10-inch skillet over medium-high heat, heat oil and cook garlic for 30 seconds, stirring frequently. Add tomatoes and cook for 5 to 8 minutes, stirring occasionally until tomatoes are soft and sauce slightly thickens. Stir in basil, salt, and pepper. Cook for an additional minute and serve the sauce over pasta.
