Tomato pasta with fresh basil, lemon, and garlic vinaigrette.
Ingredients:
  • 3 cups uncooked penne pasta (12 ounces)
  • 1 medium red tomato, cut into wedges
  • 1 medium yellow tomato, cut into wedges
  • 1/4 cup freshly shredded Parmesan cheese
  • 1/3 cup olive or vegetable oil
  • 1/4 cup chopped fresh basil leaves
  • 3 tablespoons lemon juice
  • 1 teaspoon chopped fresh garlic
Instructions:
  • Prepare pasta according to package instructions. Rinse cooked pasta under cold water and drain. In a small bowl, whisk together all Lemon-Basil Vinaigrette ingredients.
  • Place the pasta in a large bowl and drizzle with half of the vinaigrette. Cover and chill in the refrigerator for 2 hours before serving.
  • Before serving, mix together the pasta, tomatoes, and remaining vinaigrette. Top with cheese when serving.
