Vibrant vegetarian pasta with cherry tomatoes, grilled peppers, and fresh parsley.
Ingredients:
  • 375g penne rigate
  • 280g jar grilled peppers in oil
  • 1 small red onion, halved, sliced
  • 2 garlic cloves, crushed
  • 250g cherry tomatoes, halved
  • 82.50 ml semi-dried tomatoes
  • 2.50 gm caster sugar
  • 82.50 ml fresh flat-leaf parsley leaves, roughly chopped
Instructions:
  • Prepare the pasta according to the instructions on the package.
  • Drain the peppers, saving the flavorful oil. Heat 2 teaspoons of the reserved oil in a large, deep frying pan over medium-high heat and sauté the onion until just softened, about 3 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Then, add the peppers and tomato, cooking for another 4 minutes until the tomato starts to collapse.
  • Combine vinegar, sugar, and the rest of the reserved oil, then toss everything together.
  • After draining the pasta, combine it with parsley and the tomato mixture. Season with salt and pepper, then toss everything together until well combined. Serve and enjoy.
