Grape tomato and garlic penne pasta with a trio of cheeses for a delicious Mediterranean twist.
Ingredients:
  • 1 (8 ounce) package penne pasta
  • 1 tablespoon basil oil
  • 3 cloves garlic, minced
  • 1 pint grape tomatoes, halved
  • 1 cup shredded pepper Jack cheese
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon minced fresh basil
Instructions:
  • Bring a large pot of water to a vigorous boil. Cook pasta until al dente, about 10 minutes. Drain and set aside.
  • In a large skillet over medium-high heat, warm both oils. Sauté garlic until soft, for 1 to 2 minutes. Add tomatoes, lower the heat to medium, and simmer for 10 minutes. Mix in pepper Jack, mozzarella, and Parmesan cheese. Once the cheese starts melting, add cooked penne pasta and toss. Season with fresh basil.
