Delicious pasta with fresh ramps, tomatoes, capers, and bacon - a quick and irresistible dish.
Ingredients:
  • 3 medium tomatoes, chopped
  • 1 cup ramps - leaves washed, dried, and finely chopped
  • 1 teaspoon capers
  • 3 tablespoons extra-virgin olive oil, divided
  • salt and freshly ground black pepper to taste
  • 1 pound penne pasta
  • 4 slices bacon, finely chopped
  • 1 pinch white sugar, or to taste
Instructions:
  • Prepare a refreshing ice water bath in a large bowl. Score a small "x" onto the bottom of each tomato.
  • Bring a pot of salted water to a boil. Drop tomatoes in for 30 seconds until skins loosen. Remove, cool in iced water, then peel and chop.
  • In a blender, blend together tomatoes, ramps, capers, and 2 tablespoons of olive oil until smooth. Season with salt and pepper to taste.
  • Bring a large pot of salted water to a boil. Cook penne until al dente, about 11 minutes.
  • Heat 1 tablespoon of olive oil in a skillet. Cook bacon until evenly browned, about 5 to 10 minutes, turning occasionally over medium-high heat. Add the tomato-ramp mixture and heat for 1 to 2 minutes. Stir in 1 to 2 tablespoons of pasta water. Season with salt, pepper, and sugar.
  • Drain the penne and toss it in the delicious sauce.
