Savory ramp leaf quiche baked in a low-fat pie crust with fat-free Greek yogurt.
Ingredients:
  • 1 cup all-purpose flour
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 0.33333334326744 cup plain fat-free Greek yogurt, or more as needed
  • 2 tablespoons 2% milk
  • 2 tablespoons vegetable oil
  • 1 cup low-fat sour cream
  • 0.5 cup heavy cream
  • 2 large eggs
  • 1 bunch ramps leaves, rinsed and dried
  • 1 teaspoon salt
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 10-inch tart pan.
  • In a bowl, mix 1 cup plus 3 tablespoons of flour with baking powder, Greek yogurt, milk, oil, and salt using a wooden spoon until a smooth dough ball forms. If the dough is dry and crumbly, gradually add more milk or Greek yogurt, 1 tablespoon at a time.
  • Place dough on a lightly floured countertop, knead until smooth, then roll out to fit the tart pan. Line the pan with the dough, trimming any excess and crimping the edges. Use a fork to prick the bottom of the crust several times.
  • In a bowl, combine sour cream, heavy cream, and eggs, whisk until smooth. Finely chop ramps and mix into the filling. Season with salt and pepper. Pour the mixture into the crust.
  • Bake in the oven until the crust is golden, the filling is set, and it pulls away from the pan, approximately 30 minutes. Allow it to rest for 10 to 15 minutes before slicing.
