Seasonal ramp omelet served on buttered toast.
Ingredients:
  • 2 large eggs
  • salt and freshly ground black pepper to taste
  • 2 tablespoons grated Cheddar cheese, or to taste
  • 2 teaspoons ramps - leaves washed, dried, and finely chopped
  • 1 tablespoon butter
Instructions:
  • In a bowl, whisk together eggs, salt, and pepper until foamy. Gently fold in Cheddar cheese and ramps.
  • In a small skillet over medium-low heat, melt butter. Add egg mixture and cook for 30 seconds. Gently lift edges to let uncooked egg flow underneath. Tilt and shake skillet to spread uncooked egg. Continue until set, approximately 5 minutes. Flip and cook until lightly browned, around 2 minutes.
