Broil tomatoes, onions, serrano peppers, and garlic, then blend with spices, cilantro, and lime juice for a quick homemade salsa.
Ingredients:
  • 4 large vine-ripened tomatoes, cored and cut into quarters
  • 2 white onions, quartered
  • 4 serrano peppers, or to taste, stemmed
  • 6 cloves garlic
  • 2 tablespoons vegetable oil, or as needed
  • 2 teaspoons salt
  • 1 teaspoon ground cumin
  • 0.25 cup chopped fresh cilantro, or to taste
  • 1 lime, juiced
Instructions:
  • Position the oven rack 6 inches from the heat source and preheat the broiler. Cover a baking sheet with aluminum foil.
  • In a large bowl, mix tomatoes, onions, serrano peppers, and garlic; lightly coat with vegetable oil and transfer to the baking sheet.
  • Broil the vegetables in the preheated oven until they start to brown, approximately 5 minutes.
  • Combine vegetables in food processor with salt and cumin and pulse until desired texture. Add cilantro, pulse to combine, and stir in lime juice.
