Make a delectable frozen Christmas pudding with Paul's Brandy Custard by prepping ahead and popping it in the freezer for a delightful treat.
Ingredients:
  • 500ml custard
  • 300ml thickened cream
  • 130g chocolate chips
  • 165.00 ml mini marshmallows
  • 125g raspberries
  • 100g strawberries, chopped
  • 20g almond
  • 125ml dessert sauce
  • Mixed berries, to serve
  • Toasted flaked almonds, extra, to serve
Instructions:
  • Combine custard and cream in a medium bowl, whisk until smooth, then transfer to a shallow metal container. Cover with foil and freeze until firm, about 3 hours.
  • Prepare the metal pudding basin by lining it with plastic wrap. Use a metal spoon to break up the custard mixture, then transfer it to a food processor and blend until smooth. Add chocolate chips, marshmallows, raspberries, strawberries, and almonds, and mix well. Spoon the mixture into the prepared basin and freeze for at least 6 hours until it's firm.
  • Transfer the pudding onto a elegant serving plate, gently discard the plastic wrap, generously drizzle with decadent chocolate topping, sprinkle with fresh berries and extra almonds, and present it promptly.
