Indulgent Christmas ice-cream dessert for a delightful finale.
Ingredients:
  • 16 chocolate biscuits
  • 1.25 litres vanilla ice-cream, softened
  • 240.00 gm vanilla custard
  • 250.00 ml mini marshmallows
  • 21.25 gm desiccated coconut
  • 62.50 ml granulated nuts
  • 250.00 ml frozen raspberries, roughly crushed
  • Chocolate Ice Magic, to decorate
  • Sprinkles, to decorate
  • Silver cachous, to decorate
  • Vanilla custard, to serve
Instructions:
  • Cover the inside of an 8-cup metal pudding steamer with plastic wrap, leaving a 2cm overhang.
  • Break 10 biscuits into 2cm pieces. Combine ice-cream, biscuit pieces, custard, marshmallows, coconut, nuts, and raspberries in a bowl. Spoon mixture into prepared steamer, smooth the top, and sprinkle with the remaining biscuits. Freeze overnight or until firm.
  • Let pudding sit at room temperature for 5 minutes to soften before turning out onto a plate. Gently remove the wrap, then drizzle with Ice Magic and sprinkle with sprinkles and cachous. Serve with custard.
