Rocky road meets ice cream cake for an explosive flavor bomb!
Ingredients:
  • 2 litres chocolate ice-cream
  • 200g packet milk chocolate Royals biscuits
  • 375.00 ml mini marshmallows, plus extra to decorate
  • 125.00 ml dried cranberries, roughly chopped
  • 125.00 ml Maltesers, halved, plus extra to decorate
  • 150g packet Raffaello chocolates, unwrapped, plus extra to decorate
  • 82.50 ml mixed berry sauce
  • White Choc Ice Magic, to decorate
  • Silver cachous, to decorate
Instructions:
  • Cover a large metal pudding basin with plastic wrap.
  • Soften the ice-cream by allowing it to stand in a large bowl for 10 minutes, ensuring it is not melted.
  • Roughly chop 2 biscuits and set aside the rest. Mix chopped biscuits, marshmallows, cranberries, Maltesers, and Raffaellos into the ice-cream until well combined. Pour sauce on top and gently swirl for a marbled effect. Transfer ice-cream mixture into a pudding basin, smooth the top with a spatula. Press the reserved biscuits onto the top in a flat layer. Cover with plastic wrap and freeze overnight.
  • Allow the ice-cream pudding to sit at room temperature for 5 minutes. Invert the pudding onto a serving plate and delicately remove the plastic wrap. Drizzle with Ice Magic and garnish with cachous, mini marshmallows, Maltesers, and Raffaellos. Serve promptly.
