Decadent chocolate cookies with the essence of rocky road ice cream, perfect paired with a scoop of classic vanilla.
Ingredients:
  • 0.5 cup butter
  • 1 cup semisweet chocolate chips
  • 1 cup white sugar
  • 0.5 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup chopped walnuts
  • 48 miniature marshmallows
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Melt the butter and 1/2 cup of chocolate chips in a small saucepan, stirring occasionally. Once melted, remove from heat and let it cool.
  • Combine melted chocolate with sugar, eggs, and vanilla in a medium bowl. Sift in flour, baking powder, and salt, then mix into the chocolate. Fold in nuts and remaining chocolate chips.
  • Spoon dough onto cookie sheets and top each with a mini marshmallow. Bake in preheated oven for 7-8 minutes. Transfer to wire racks to cool after removing from baking sheets.
