Kid-friendly rocky road cookies for family fun in the kitchen.
Ingredients:
  • 525g packet Green's Macadamia Choc Cookies
  • 2 eggs, lightly beaten
  • 100g margarine or softened butter
  • 125.00 ml glace cherries, halved
  • mini marshmallows, for decoration
Instructions:
  • Preheat your oven to 180°C and lightly grease a baking tray.
  • Combine cookie mix and chocolate chunk sachet in a large mixing bowl. Stir in eggs and margarine or butter until just combined. Fold in glace cherries gently.
  • Shape 2 tablespoonfuls of mixture into balls, then place them on a baking tray, making sure to leave space for spreading. Gently flatten them with a fork.
  • After baking for 18 to 20 minutes, immediately top each cookie with mini marshmallows while they are still warm. Allow to cool for 5 minutes, then transfer to a wire rack to cool completely.
