Indulgent cookies loaded with chocolate chunks and mini marshmallows, inspired by Rocky Road ice cream.
Ingredients:
  • 0.75 cup brown sugar
  • 0.25 cup butter
  • 1 egg
  • 1 cup all-purpose flour
  • 2 ounces white chocolate, chopped, divided
  • 2 ounces dark chocolate, chopped, divided
  • 1 tablespoon cocoa powder
  • 0.5 teaspoon baking powder
  • 0.5 cup miniature marshmallows
Instructions:
  • Preheat your oven to an enticing 375°F (190°C).
  • In a bowl, cream together brown sugar and butter until smooth. Add the egg, then stir in the flour, half of the chopped chocolate, cocoa powder, and baking powder until a dough forms.
  • Scoop dough onto a baking sheet, leaving space for spreading. Gently flatten.
  • Bake in the preheated oven for about 5 minutes until the edges are cooked but the tops are still slightly gooey.
  • Take out the cookies from the oven and press the leftover chocolate and mini marshmallows onto the tops. Bake for an additional 5 minutes until the tops are firm, ensuring the marshmallows do not burn.
