Upgrade rocky road with buttersnap cookies.
Ingredients:
  • 200g dark chocolate, chopped
  • 125g unsalted butter, chopped
  • 49.50 gm icing sugar mixture
  • 1 egg, lightly beaten
  • 250g packet Butternut Snap Cookies, broken into pieces
  • 125.00 ml mini marshmallows
  • 100g red glace cherries, halved
  • 16.25 gm shredded coconut
Instructions:
  • Prepare a 7cm-deep, 19cm square pan by greasing it and lining it with baking paper, ensuring a 2cm overhang on all sides.
  • In a saucepan over gentle heat, combine chocolate, butter, and icing sugar. Stir constantly for 8 to 10 minutes until silky and melted. Take off the heat and pour into a bowl. Let it rest for 5 minutes before using.
  • Combine the egg with the chocolate mixture and stir until mixed. Add cookies, marshmallows, cherries, and coconut, and stir to incorporate. Transfer the mixture into the prepared pan and press it down using the back of a fork. Cover and refrigerate for at least 4 hours until set. Cut the mixture in half and then into 10 pieces each. Serve and enjoy!
