Homemade pumpkin bars with rich cream cheese icing for a delicious fall dessert.
Ingredients:
  • 1 (15 ounce) can pumpkin puree
  • 1.6666667461395 cups white sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 cup butter, softened
  • 1 (3 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups sifted confectioners' sugar
Instructions:
  • Collect all the cake ingredients and frosting ingredients.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a medium bowl, use an electric mixer to blend together pumpkin, sugar, oil, and eggs until fully combined.
  • Combine the flour, cinnamon, baking powder, baking soda, and salt by sifting them in a separate bowl.
  • Incorporate into the pumpkin mixture until fully blended.
  • Evenly distribute the batter in a 10x15-inch jelly roll pan without greasing it.
  • Bake in the preheated oven for 25-30 minutes until the cake springs back when gently pressed. Allow it to cool after removing from the oven.
  • Once the cake has cooled, prepare the frosting: Cream together butter and cream cheese until velvety, then mix in vanilla. Gradually incorporate confectioners' sugar, beating until the mixture is creamy.
  • Evenly frost the top of the cooled cake and slice it into 24 squares.
