Create an unforgettable Christmas dessert.
Ingredients:
  • 6 eggwhites
  • 330g caster sugar
  • 4.40 gm vanilla extract
  • 5.00 gm cornflour
  • 1 tsp white wine vinegar
  • 250.00 ml small mint leaves
  • Good-quality vanilla ice cream, to serve
  • 6 cardamom pods, bruised
  • 6 cloves
  • 1 cinnamon quill
  • 1 vanilla bean, split, seeds scraped
  • 250ml red wine
  • 220g caster sugar
  • 150g raspberries
  • 150g redcurrants (see note)
  • 250g strawberries, hulled, halved
  • 5.00 gm arrowroot (see note)
Instructions:
  • Preheat your oven to 150°C and prepare 2 baking trays by lining them with baking paper.
  • Whisk egg whites and sugar together over a double boiler until sugar dissolves. Transfer mixture to an electric mixer bowl and beat until thick and glossy. Carefully fold in vanilla, cornflour, and vinegar.
  • Spoon 4 meringue dollops onto each baking tray, gently pressing the back of a spoon to create a shallow indent in the center of each.
  • Bake in a preheated oven at 120°C for 1 hour. Let the meringues sit in the oven for 2-3 more hours until they are dry and oven has cooled completely. Store in an airtight container for up to 2 days.
  • Prepare the mulled fruits by tying cardamom and cloves in a small piece of muslin. Combine with cinnamon, vanilla, wine, and sugar in a saucepan. Heat over low heat to melt the sugar, then simmer for 3-4 minutes until thickened. Add berries and simmer for 1 minute. Mix arrowroot in 1/3 cup (80ml) cold water and stir into the syrup. Simmer for 1-2 minutes until thick. Chill until ready, discarding spices before serving. To serve, place meringues on plates, top with ice cream, berries, and syrup. Garnish with mint.
