Pavlova with fresh strawberries and almond cream

Create a stunning pavlova with strawberries, cream, and amaretto drizzle.
Ingredients:
  • 6 large egg whites
  • 356.90 gm caster sugar
  • 5.10 gm white distilled vinegar
  • 2.20 gm pure vanilla extract
  • 0.60 gm fine sea salt
  • 40.00 ml corn flour
  • 500g fresh small strawberries, halved
  • 30.00 ml amaretto liqueur
  • 28.60 gm honey
  • 335.83 gm pure cream
  • 1 tsp almond extract
  • 40.00 ml finely chopped unsalted toasted shelled pistachios
  • Icing sugar, for sifting
Instructions:
  • Preheat the oven to 150C (130C fan-forced) with the rack positioned at the bottom. Line a large baking tray with baking paper, draw a 20cm circle in the center of the paper, and then flip the paper over for the meringue.
  • Using an electric stand mixer with a whisk attachment, beat egg whites, sugar, vinegar, vanilla, and salt on medium-high speed for approximately 18 minutes, until firm peaks form. Then, sift corn flour into the meringue and gently fold it in.
  • Scoop the meringue onto the center of the circle on the baking tray. Gently spread it out evenly within the circle to create a thick, fluffy layer, remembering that the pavlova will slightly expand during baking.
  • Lower the oven temperature to 105C, then put the pavlova in and bake for around 1 hour until the outside is crispy and pale while the center remains marshmallow-like. Turn off the oven, wedge the door open with a wooden spoon, and let the meringue sit in the oven for about 30 minutes to cool slightly before taking it out to cool completely.
  • Prepare the toppings by tossing strawberries, amaretto, and honey in a bowl until coated. Let sit for 30 minutes until juices form. In another bowl, whisk cream and almond extract until thick. Place meringue on a platter and spoon cream on top. Arrange strawberries on top, then sprinkle with pistachios and dust with icing sugar.
  • Cut the pavlova into wedges and place on plates. Drizzle with the strawberry juices and serve promptly.
