"Always have frozen peas on hand for tasty dishes like Pea and brie quiche."
Ingredients:
  • 2 sheets frozen ready-rolled shortcrust pastry, partially thawed
  • 25g butter
  • 2 medium red onions, halved, thinly sliced
  • 2 garlic cloves, crushed
  • 250.00 ml frozen peas
  • 125g brie cheese, thinly sliced
  • 8 eggs
  • 126.25 gm pure cream
  • Salad leaves, to serve
Instructions:
  • 1. Preheat your oven to 180°C/160°C fan-forced and grease a 6cm-deep, 20cm round (base) springform pan. 2. Cut a round from 1 pastry sheet using the pan base as a guide and line the base with the round. 3. Cut the remaining sheet into 4 even strips, and line the side of the pan with the strips, pressing the joins together to secure. Trim any excess pastry and place the pan on a baking tray.
  • In a frying pan over medium heat, melt butter until sizzling. Add onion and garlic, then sauté for 10 minutes until onion softens. Stir in peas and parsley, season generously with salt and pepper.
  • Spread half of the onion mixture on the bottom of the prepared pan, layer with half of the brie. Repeat with the remaining onion mixture and brie. In a jug, whisk together eggs and cream, then pour over the brie.
  • Bake the quiche for 50 minutes or until it is perfectly set. Let it rest for 5 minutes before removing it from the pan and serving it with fresh salad leaves.
