Pea & ham soup

Cozy up with comforting pea and ham soup when the cold weather hits.
Ingredients:
  • 25g butter
  • 1 leek, thinly sliced
  • 250g sebago potatoes, peeled, coarsely chopped
  • 1L chicken style liquid stock
  • 126.25 gm thickened cream, plus extra for serving
  • 1.2 kg ham hock
  • 375.00 ml dried split peas, rinsed
  • 2L water
  • 500.00 ml frozen peas
  • Baby red garnet leaves, to serve
Instructions:
  • Combine butter and olive oil in a large saucepan, and heat over medium-high heat.
  • Combine leek, potato, ham hock, dried split peas, water, and chicken stock in a saucepan. Simmer partially covered for 1 3/4 hours. Remove ham hock, add frozen peas, and simmer for an additional 10 minutes. Puree the soup.
  • Remove the meat from the hock and coarsely chop, then return to the pan along with the thickened cream. Season with white pepper. Add a swirl of extra cream for extra richness, if desired, and sprinkle with baby red garnet leaves.
