Pea & ham soup

Cozy up with comforting pea and ham soup when the cold weather hits.
Ingredients:
25g butter
1leek, thinly sliced
250g sebago potatoes, peeled, coarsely chopped
1L chicken style liquid stock
126.25 gm thickened cream, plus extra for serving
1.2 kg ham hock
375.00 ml dried split peas, rinsed
2L water
500.00 ml frozen peas
Baby red garnet leaves, to serve
Instructions:
Combine butter and olive oil in a large saucepan, and heat over medium-high heat.
Combine leek, potato, ham hock, dried split peas, water, and chicken stock in a saucepan. Simmer partially covered for 1 3/4 hours. Remove ham hock, add frozen peas, and simmer for an additional 10 minutes. Puree the soup.
Remove the meat from the hock and coarsely chop, then return to the pan along with the thickened cream. Season with white pepper. Add a swirl of extra cream for extra richness, if desired, and sprinkle with baby red garnet leaves.
