Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 2 celery sticks, thinly sliced
  • 420g (2 cups) green split peas, rinsed, drained
  • 1.5L (6 cups) chicken style liquid stock
  • 250g sliced leg ham, chopped
  • 62.50 ml fresh mint leaves, torn
  • 62.50 ml celery leaves, torn
  • Crusty bread, to serve
Instructions:
  • In a large saucepan over medium-low heat, warm the oil. Add the onion and sliced celery. Cook while stirring frequently for about 3 minutes, or until the onion softens slightly.
  • Add the peas and stock to the pot, then cover it. Turn the heat up to high to bring the mixture to a boil. Lower the heat to medium-low and let it simmer, partially covered, for about 30 minutes until the peas are tender.
  • Combine the ham, fresh mint, and celery leaves into the mixture. Cook and stir for 2 minutes, or until everything is heated through. Serve the warm dish with some crusty bread on the side.
