Pea and mint potato mash

Ingredients:
  • 750g potatoes (see note), peeled, diced
  • 625.00 ml frozen green peas
  • 60g butter, chopped
  • 128.75 gm milk, warmed
  • 40.00 ml fresh mint leaves, finely chopped
Instructions:
  • Boil potatoes in salted water until slightly tender, about 8 minutes. Add peas, cover, and continue cooking until peas are tender, about 2 minutes. Drain in a colander.
  • Add the vegetables back into the saucepan and gently shake over low heat for about 30 seconds until any extra moisture disappears. Then, take the saucepan off the heat.
  • Roughly mash vegetables with a potato masher. Gradually mix in butter until smooth. Stir in warmed milk until creamy. Season with salt and pepper, then fold in mint. Serve.
