Pea pesto

Whip up a quick pasta sauce while your pasta cooks. Serves 2, easily adjustable. Pair with 75g dried pasta per person or make fresh pasta with flour and water.
Ingredients:
  • 100 g frozen peas
  • ¼ of a clove of garlic
  • 2 sprigs of fresh basil or mint
  • 30 g pine nuts
  • 30 g Parmesan cheese plus extra for grating
  • extra virgin olive oil
Instructions:
  • **Rewritten Step:** Place a sieve over the cooking pasta, add peas, and blanch for 2 minutes. Peel garlic and place it in a mortar with sea salt. Add herb leaves and pine nuts. Drain peas and add them, then lightly crush to desired texture. Grate Parmesan and mix with 2 tablespoons of olive oil. Season with salt and pepper. Drain pasta, saving a mug of water. Toss pasta with pesto, using cooking water to loosen. Serve on plates with a drizzle of olive oil and extra Parmesan, if desired.
