Ingredients:
  • Melted butter, for greasing
  • 1 425g can peach slices in natural juice, drained
  • 100g butter, cubed, at room temperature
  • 110g (1/2 cup) caster sugar
  • 2 eggs
  • 75g (1/2 cup) self-raising flour
  • 75g (1/2 cup) plain flour
  • 100g (1/2 cup) ground almonds
  • Icing sugar, to serve
Instructions:
  • Preheat your oven to 180°C. Grease a 16.5 x 26cm slab pan with melted butter and line it with non-stick baking paper, ensuring it covers the base and extends over the long sides.
  • Drain peach slices on paper towel. In a medium mixing bowl, use electric beaters to whip butter, caster sugar, and vanilla essence until light and fluffy. Gradually add eggs one at a time, beating well after each addition until fully combined.
  • Sift in the self-raising and plain flours over the butter mixture, then add the ground almonds. Use a large metal spoon to gently fold the dry ingredients into the butter mixture until combined. Spoon the mixture into the prepared pan and carefully smooth the surface. Be mindful that the mixture will be thick, so make sure to secure the baking paper in place.
  • Place the peach slices neatly on the batter and gently press them down so they are partly submerged. Bake in a preheated oven for 45 minutes or until a skewer inserted into the center comes out clean. Let it rest in the pan for 5 minutes before removing.
  • For serving, enjoy a slice at room temperature cut into 12 portions. Or for a cozy dessert, cut into 8 portions and serve warm with a dollop of cream or a scoop of ice cream. Dust with icing sugar just before serving.
