Try this quick and delicious peach-almond coffee cake, perfect for breakfast or a snack! Ready in just 40 minutes.
Ingredients:
  • 2/3 cup fat-free (skim) milk
  • 1 egg or 1/4 cup fat-free cholesterol-free egg product
  • 2 tablespoons canola or vegetable oil
  • 1/2 teaspoon almond extract
  • 2 cups Reduced Fat Bisquick™ mix
  • 1/3 cup sugar
  • 1 cup chopped fresh or frozen (thawed and drained) peaches
  • 1/2 cup Yoplait® Thick & Creamy vanilla lowfat yogurt
  • 1/4 cup packed brown sugar
  • 1/4 cup sliced almonds
Instructions:
  • Preheat the oven to 375°F. Grease an 8x1 1/2-inch round pan with cooking spray. In a large bowl, combine milk, egg, oil, and almond extract until well mixed. Gently fold in Bisquick and sugar until just moistened (do not overmix - some lumps are okay). Spread the batter evenly in the prepared pan.
  • Combine the peaches and yogurt, then dollop the mixture onto the batter. Use a knife to gently swirl everything together. Finish with a sprinkle of brown sugar and almonds.
  • Bake for 25-30 minutes until a toothpick inserted in the center comes out clean. Serve warm or cool and store covered in the refrigerator.
