Delicious peach pastry with vanilla, almonds, and fresh peaches.
Ingredients:
  • 25g butter, room temperature
  • 30.00 gm caster sugar
  • 2.20 gm vanilla essence
  • 33.00 gm ground almonds
  • 1 sheet frozen puff pastry, thawed
  • 3 ripe peaches
  • Icing sugar, to serve
  • Vanilla ice cream, to serve
Instructions:
  • Preheat the oven to 200C (180C fan-forced) and line a large baking tray with non-stick baking paper. Stir together the butter, sugar, vanilla, and ground almonds using a wooden spoon.
  • Start by cutting four 12cm rounds from the pastry using an 11cm round cutter or saucer as a guide. Transfer the pastry rounds to the prepared tray. Score a line about 1cm from the edge of each round to create a rim, then prick the pastry inside the line with a fork.
  • Spread the almond mixture inside the scored line on the pastry, cut the peaches into wedges, and arrange them over the almond mixture, slightly piling them up as needed.
  • Bake until golden brown for 15-20 minutes, then cool on a wire rack for 5 minutes. Dust galettes with icing sugar and serve with ice cream scoops.
